When I'm examined by the state, I need to be able to show that no one could tamper with the archive copy.

All emails (and SMS messages) sent by the system are kept in the recipient's contact details, under "all messages." Once sent, even if the message template is edited, changed, or even deleted, the original sent message is archived in their record.
